Tonno ‘a cipuddata

The “tunnu cca cipuddata” is a typical dish of the island of Favignana and of all the Egadi but now known in almost all coastal areas of the island. It consists of sliced fresh tuna fried and seasoned with bitter-sweet onions. This has been in fact a winning combination in Mediterranean cuisine; the traditional mixture of vinegar and sugar or honey, has been known for centuries as a method of preserving dishes.
