Pasta alla Norma

Norma pasta is one of the symbols of the sicilian cuisine, with all its flavors and fragrances. It is an original recipe from the city of Catania and it’s characterized by typically Mediterranean flavors. It is a dish (usually macaroni) seasoned with tomato sauce and fried eggplant, salted ricotta and basil at the end. This specialty was made as a culinary gift to the most beautiful work of the famous composer Vincenzo Bellini: Norma.
