Parmigiana di melanzane

The name “Parmigiana” comes from Sicilian dialect “Parmiciana”, also from latin “parma”, which indicates wood pieces of persian windows (the same shape of the slices of aubergines placed in a pan). Few flavors, symbol of Mediterranean dishes: tomato, fried aubergines, basil and cheese (one or more cheeses including Sicilian pecorino, mozzarella, scamorza and caciocavallo).
