The focaccia or “scaccia” is a typical dish of the Iblei area and if you go to the area of Ragusa you should definitely taste it. We could simply describe it as a stuffed bread dough. The Ragusans prepare it by rotating 3 or 4 times a very thin rectangular dough. The filling can vary; However, the most popular fillings are those with ricotta and onion, ricotta and sausage, tomato and onion; tomato and eggplant, etc. The origin is poor, like many Sicilian dishes. In Catania it’s called “scacciata”, while in Palermo the name becomes “impanata”.
