Rabbit ‘a Stimpirat

Typical Sicilian recipe, the “cunigghiu a stimpirata” is a rabbit meat, cooked with typical local products widely used in Sicilian cuisine such as eggplants, peppeoni, onions, carrots, sultanas, pine nuts, capers and olives, all seasoned with mint and vinegar mixed with honey, that gives a further decisive taste to the preparation.
