The “biancomangiare” derives its name from the white color of all its ingredients: milk and almonds. Generally the preparation involved the use of milk, while the Modica’s one is prepared with almond milk. In the variant of the Platani hills there is the use of wheat starch and lemon zest, in addition to the vanilla. The Ragusan recipe also includs lemon, cinnamon and honey made in Iblei mounts.
